Vegetables and fruit were an important part of my daily diet, and I developed a simple routine for preparing several days’ worth at once. My usual choices included California vegetable mix, corn, green peas, apples, bananas, oranges, and mandarins.
For the vegetables, I usually bought several bags of frozen vegetables and prepared them in batches. I would boil them in a small amount of water and add salt, chili powder, and pepper, sometimes serving the mixture almost like a soup. I then divided the vegetables into smaller portions and kept them in the refrigerator for the following days.
I followed a similar approach with fruit. I peeled and diced apples, bananas, oranges, and mandarins, mixed them together, and divided them into smaller portions that I could easily have each day.
At the time, I was also paying attention to the calories in the portions I prepared. Each portion of California vegetables shown in my photos contained around 100 calories, while the portions of corn and green peas contained around 300 calories.
