Preparing Vegetables and Fruit
Vegetables and fruit were an important part of my daily diet, and I developed a simple routine for preparing several days’ worth at once. My usual choices included California vegetable mix, corn, green peas, apples, bananas, oranges, and mandarins.
For the vegetables, I usually bought several bags of frozen vegetables and prepared them in batches. I would boil them in a small amount of water and add salt, chili powder, and pepper, sometimes serving the mixture almost like a soup. I then divided the vegetables into smaller portions and kept them in the refrigerator for the following days.
I followed a similar approach with fruit. I peeled and diced apples, bananas, oranges, and mandarins, mixed them together, and divided them into smaller portions that I could easily have each day.
At the time, I was also paying attention to the calories in the portions I prepared. Each portion of California vegetables shown in my photos contained around 100 calories, while the portions of corn and green peas contained around 300 calories.
My Preparation
I took photos of the vegetables and fruit I prepared and portioned for the days ahead.

Cooking Khoresh Gheymeh (Persian Stew)
For this week’s cooking, I decided to make Khoresh Gheymeh, a Persian stew and one of my favorite Persian dishes. I started with an online recipe but made several changes based on advice from my mother. I also adapted some of the ingredients and preparation to make my version lighter while still keeping the flavor I enjoyed. As with much of my cooking during this period, I prepared enough to have it as my main meal throughout the week. The final result turned out very well and was one of the dishes I particularly enjoyed making.

Cooking Beef and Chickpeas
For this week’s cooking, I decided to make beef and chickpeas. It was a relatively simple meal to prepare, while also being filling and practical to make in a large batch.
The entire cooking process took me around two to three hours, but it gave me enough food for most of the following week. Making larger meals like this became a practical way for me to cook: putting in the time once and having my main meals prepared for several days afterward.
